The colour is bright, with a yellow hue and attractive green highlights.
The aromatic profile is delicate and subtle, with hints of exotic aromas, mango, and notes of garrigue and ginger.
The palate reveals a fine balance, substance, and lovely bitterness, leading to a long, smooth and persistent finish, represented by notes of candied orange peel.

Although asparagus, with its strong root flavour, is often difficult to pair with wine, the combination with Rolle and its beautiful minerality, a stony, even vegetal touch, proves surprising.
Vermentino is also an ideal accompaniment to fresh fish, shellfish, scallops, spaghetti alle vongole, seafood risotto or a Niçoise salad. It is elegant with white meat (such as veal) and sublime with lemon chicken served with fresh coriander, sun-dried tomatoes or black olives.
