A truly exceptional Vermentino
The new Signature
2021 was anything but an easy year for us. First the spring frost, then a very dry midsummer, and finally the wildfires all around us. We experienced the reality of climate change first-hand on many occasions.
To take our minds off things, we’ve devoted ourselves to a project that’s been on our minds for a few years now: The creation of a truly exceptional Vermentino through a combination of the utmost selection and care, alongside exciting experiments.
We agreed on the following steps: rigorous selection of the finest grapes during hand-picking; transport of whole bunches in small crates; one week’s maceration of the white grapes prior to pressing in a temperature-controlled stainless steel tank, 30 per cent of which included stems and stalks; spontaneous fermentation; ageing in a concrete egg (Œuf de Beaune), malolactic fermentation and no filtration.
The first steps have been taken and the tasting of the juice after maceration and pressing is promising. Pictured here are the grapes after maceration, on their way to pressing.
