Côtes de Provence

Our best white grapes treated with greatest care. Ten days of maceration, a spontaneous fermentation, a "malo" and a maturation in a natural stoneware amphoras showing the full potential of the Vermentino grape.

Wine

We wanted the best for our Signature white. Hand-picked, our finest Rolle (Vermentino) grapes were carefully transported in small crates to the winery. After whole bunch maceration in thermo-regulated stainless steel vats for around ten days and gentle pressing, spontaneous alcoholic fermentation and malolactic fermentation took place in natural stoneware amphorae (Vin et Terre). We chose not to add sulphites and to filter the wine very lightly. The 2024 shows the full potential of the Rolle grape (Vermentino). Production: 3000 bottles. Open 20 minutes before drinking and serve at 9°C.

Tasting notes

The colour is that of pear juice, with green highlights.

The nose is frank and intense, expressing itself with purity, the pear and peach aromas giving way to a deeper, mineral framework, mixed with notes of pine and other resinous woods.

The palate is precise, with fine balance, where acidity brings a refreshing character, with aromas of cedar, lemon, which bring drinkability to a finish marked by light tannins and a pleasant sweetness.

Food Pairing

Our Signature goes perfectly with all fish dishes. We recommend turbot, St. Pierre or sole grilled to perfection with Beurre Blanc or a Béarnaise sauce. Vermentino wines are also excellent companions for seafood, for example a fresh carpaccio of scallops with citrus and passion fruit. 
For meat lovers, we recommend pork tenderloin, lemon chicken or curry, and for vegetarians, green or white asparagus with beautiful buttered potatoes. 

For Vermentino wines, we recommend sheep and goat cheeses from Provence or Sardinia. With the Signature, we like best a fresh sheep's cheese kept juicy in olive oil with herbs from Provence (but without garlic!), or a Pecorino (sheep) or Caprini (goat) from Sardinia.

We love all kinds of almond cakes with our Signature. Even better with Vermentino wines are the famous Italian holiday sweets like a Panettone or a Colomba. For these specialties Italian bakers mix flour, eggs, butter, natural yeast, sultanas, candied oranges and citrus zest before letting the dough rise for about 30 hours or more.
